Banana Berry Cereal Muffins

Pillsbury banana flavored quick bread and muffin mix combined with Cap'n Crunch's "Oops! All Berries" sweetened corn and oat cereal make a colorful and delicious treat for kids of all ages. They are easy to make and all your friends and family will love them! Just ask Little Teddy and his friends!

Equipment

  • 1 large bowl
  • 3 medium bowls
  • 1 spatula or spoon to stir all the ingredients together
  • 1 fork to mash the banana
  • 1 cup measuring cup for the milk
  • 1 cup measuring cup for the cereal
  • ½ cup measuring cup for the oil
  • 12 count muffin tin
  • 12 paper muffin cup liners
  • Timer
  • Pot holders

Ingredients

  • 1 box Pillsbury Banana Quick Bread & Muffin Mix
  • 1 cup Cap'n Crunch's Oops! All Berries Cereal
  • 1/2 cup Cap’n Crunch’s Oops! All Berries Cereal used after 10 minutes of baking for topping
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 eggs
  • 1 banana mashed
  • 1 banana sliced into rounds - used after 10 minutes of baking

Instructions

Prepare the Oven

  • Place the rack in the center. If you are making a double batch and have another muffin tin, place the bottom rack closer to the bottom but not right on top of the heating element. That would be too hot and burn the bottom of the muffins. Place the second rack in the upper half of the oven and be sure to allow space away from the upper heating element so the top of your muffins don’t burn.
  • Preheat the oven to 350 degrees.

Prepare Muffin Tin

  • Place paper liners in each cup. If you don’t have paper liners, that’s ok! Spray the cups with canned oil spray or dip a paper towel into vegetable oil or melted butter or margarine and wipe each cup

Gather and Prepare Ingredients

  • Gather and prepare your ingredients to mix together

  • Open the packet of Pillsbury's Banana quick bread mix and pour into the large bowl

  • Measure 1 cup of Cap'n Crunch's Oops! All Berries Cereal and put into a medium sized bowl

  • In a medium sized bowl, mash up the banana until it is smooth with no lumps
  • Crack open the eggs into a medium sized bowl and beat until combined
  • Pour milk into the 1 cup measuring cup
  • Pour vegetable oil into the ½ cup measuring cup

Mixing Ingredients

  • Add the banana, milk, oil, cereal and eggs to the banana quick bread mix in the large bowl
  • Mix all ingredients together until a batter is formed
  • Carefully fill each cup or paper liner ¾ full. You want to allow room for the batter to rise while baking. Place a slice of banana in each muffin batter.

  • Check to see that your oven is heated to 350 degrees
  • Place your muffin tin into the oven
  • Set a timer for 12 minutes
  • Remove the muffins from the oven and let cool. The colors of the cereal may not be as vibrant as you like, but the taste is still delicious. If you want more color in your muffin you can add some cereal during the baking process. If the banana slice sinks into the muffin during baking, don't worry! All the banana flavor is still there. You can add a decorative slice before serving.

Optional: Adding cereal during baking.

  • If you want your muffins to POP with color, you can some cereal on top just before the baking is completed. You want to add before the top crust is set.
  • After 10 minutes of baking, use pot holders to take your muffin tin(s) out of the oven and place on a counter. Close the oven door so that no heat escapes.
  • Carefully place Cap’n Crunch’s Oops! All Berries Cereal on top and gently press into the batter.
  • Return the muffin tin to the oven and cook for an additional 2 minutes.

Optional: Adding decorative banana slice after baking

  • Add a 1/2 round of sliced of fresh banana to the top of the muffins to give them a professional and picture perfect look!

Little Teddy: A batter is the result of mixing wet and dry ingredients together until you can’t see each ingredient with the exception of ingredients that can’t melt or mix such as nuts, dried fruit or cereal.   The batter should be smooth with all the flour mixed into the batter.
Lady Ladybug: A double batch is two times each ingredient.
Mr. Puppy: A timer counts the seconds, minutes and hours.  It can be found on your oven.  You might also have a timer that sits on your counter.  There are other ways to track the time: look at a clock, a watch, or a smart phone.  A smart phone will have a timer in the clock application (App).
Mother Roo: If you don't have Cap'n Crunch's Oops! All Berries Cereal, you can use any colorful cereal.
Baby Kanga: Have your Mom or Dad help you pour the batter into the muffin tin.  It helps to use a small measuring cup and a spoon to catch the drips.
Snuggles: You can freeze the muffins to enjoy later!
